Breadless Cucumber Tea Sandwiches

When you think of an “Afternoon Tea” what kind of food pops into your head? Scones, of course, but the second is usually cucumber sandwiches. They are a staple of any tea party and can be assembled in many different ways. I although I am not proficient in the kitchen, I do make a wicked good tea sandwich. My preferred way of creating a cucumber sandwich is with chevre with honey goat cheese and organic dill.

Normally I would use either a soft wheat or toasted sourdough bread for my tea sandwiches but with more and more people finding they have an intolerance to gluten, I find that “breadless” cucumber sandwiches are a wonderful substitute! They are ridiculously easy to make and ensure that your gluten-free friends will not go hungry at your tea themed event.

First you will want to cut your cucumber into cracker-like width slices. Then pat your cucumbers with a towel to remove some of the excess moisture. Next comes the goat cheese. You will want it to be room temperature so it is easy to spread. I normally heat mine up in the microwave for about 7-10 seconds. You want the consistency to be that of a whipped cream cheese.

Take each cucumber slice and add a dollop of goat cheese. Spread the cheese with a butter knife or spoon to your desired thickness (I tend to be heavy handed as I LOVE goat cheese) and then top with either dried or fresh dill. You are done! You now have a delicious “breadless” cucumber sandwich to share with your “not so gluten friendly” guests. Cheers!
